This is such an easy Vegan, Plant-based recipe to throw together. Works great for an easy lunch, a snack, or to bring along to a pot-luck. (I actually eat this for breakfast…) I’ve provided the ingredients I usually use, but you can add your own ideas too. Peppers, olives, various types of rice (stick with brown and wild rice) and different types of beans all work well! These muffins are super easy and delicious! I’ve tried MANY vegan, sugar-free muffins and often they are tasteless and hard. I have tweaked and worked on this recipe and it works!
