    Ridiculously Delicious Vegan Cinnamon Rolls

This recipe is perfect for that yummy, sweet, super bad but deliciously amazing treat.  The kids and I made these for our study of the Duchess Bakes a Cake and I see this being the kind of recipe we could enjoy on special occasions for years to come. The recipe comes from a book called The Vegan Diner by Julie Hasson. Ingredients:   Dough   2 1/4 tsp active dry yeast 1 tsp granulated sugar (I reduced this to half a tsp) 1/4 hot water 1/4 cup agave nectar 1/4 cup canola oil 1/4 orange juice 1/2 cup water, room temp. 1 TBS orange zest 3 3/4 to 4 cups unbleached,…

Simply Delicious Black Bean & Brown Rice Salad

This is such an easy Vegan, Plant-based recipe to throw together.  Works great for an easy lunch, a snack, or to bring along to a pot-luck.  (I actually eat this for breakfast…)  I’ve provided the ingredients I usually use, but you can add your own ideas too.  Peppers, olives, various types of rice (stick with brown and wild rice) and different types of beans all work well! Just make sure to keep to softer veggies (ie: not carrot chunks) to make eating more enjoyable!  Ingredients: 2-3 cups of cooked brown rice (1 cup uncooked) 1 cup(ish) of black beans (one can, rinsed well) 1 cup diced tomatoes (or more, depending on how much you…

    Easy, Yummy Sugar-free Vegan Muffins!

These muffins are super easy and delicious!  I’ve tried MANY vegan, sugar-free muffins and often they are tasteless and hard.  I have tweaked and worked on this recipe and it works! This is my go-to muffin recipe.  Love that it fits right in to the way we are trying hard to eat – no sugar, no animal products, and very little fat. PS. The kids love them!   Ingredients 1 1/2 cups of whole wheat flour 1/4 cup ground flax seeds 1/4 cup + 2 TBS of unsweetened applesauce 1 large mashed ripe banana 1 cup soy or almond milk 2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1/2 tsp cinnamon 1 TBS vegetable or…

Questioning Food and dropping SUGAR… eeek!

I’m on a bit of a kick right now when it comes to habits.  I’ve been really challenged from within to make some big changes and what better place to share than here?  🙂 So… food.  I love food.  I love all kinds of food.  I have especially been drawn to food that isn’t at all good for me.  Sugary, fatty, salty – you name it.  For years, I ate whatever I wanted, whenever I wanted.  I was very (VERY) addicted to sugar and I would think nothing of eating two bowls of ice cream and a chocolate bar for a ‘bedtime’ snack.  Honestly. This wasn’t THAT long ago but…
